Chili Powder: Product Characteristics, Nutritional Value, and Health Benefits**
**Product Introduction**
Chili powder appears as a fine, uniformly textured powder in red or reddish-yellow hues, with an oily sheen and consistent consistency. It is a blended product made from finely ground red chili peppers, yellow chili peppers, chili seeds, and a small portion of chili stems, offering the distinctive pungent aroma of chili—sharp and penetrating, often causing a sneeze upon sniffing.
Traditionally, the most authentic chili powder is produced by pounding the ingredients in a stone mortar. Alternatively, dried chili peppers can be sun-dried or roasted over low heat in a pan before being ground into powder.
**Nutritional Benefits**
1. **Relief from Fever and Pain:** Chili is warm and pungent in nature. It helps reduce fever by inducing sweating and alleviates muscle pain, demonstrating significant analgesic and antipyretic effects.
2. **Cancer Prevention:** Capsaicin, the active component in chili, is a potent antioxidant that helps inhibit cellular metabolism associated with carcinogenesis, thereby reducing the risk of cancer cell development.
3. **Appetite Stimulation and Digestive Aid:** The strong pungent aroma of chili stimulates the secretion of saliva and gastric juices, enhances appetite, promotes intestinal motility, and aids digestion.
4. **Weight Management and Fat Reduction:** Capsaicin promotes fat metabolism and helps prevent fat accumulation in the body, supporting weight control and reducing the risk of obesity-related conditions.
**Dietary Therapeutic Effects**
Chili is warm in nature, pungent in taste, and mildly toxic. It acts on the spleen and stomach meridians. It is traditionally used to relieve indigestion, cold-related stomach pain, rheumatic pain, and lower back muscle pain.
**Effects on the Digestive System**
Chili tincture or capsaicin, when taken orally, acts as a stomachic that enhances appetite and improves digestion. Animal studies (on dogs with gastric fistulas) have shown that chili water stimulates the oral mucosa and reflexively enhances gastric motility. Various chili-based seasonings, when taken orally, increase saliva secretion and salivary amylase activity. However, excessive oral intake may lead to gastritis, enteritis, diarrhea, and vomiting. Some studies have also reported that chili exerts inhibitory and antispasmodic effects on isolated animal intestines.
**Antibacterial and Insecticidal Properties**
Capsaicin exhibits significant inhibitory effects against *Bacillus cereus* and *Bacillus subtilis*, but shows no efficacy against *Staphylococcus aureus* or *Escherichia coli*. The stems and leaves of the chili plant do not possess antibacterial properties, though they show very mild inhibitory effects against *Mycobacterium tuberculosis*. A 10–20% chili decoction has been found effective in eliminating bedbugs.
**Effects on Peripheral Circulation**
When applied topically, chili preparations act as a rubefacient, causing reflex dilation of local blood vessels and promoting peripheral blood circulation. Chili tincture is sometimes used for chilblains. However, some researchers suggest that chili primarily stimulates sensory nerve endings to produce a sensation of warmth, with minimal direct effect on blood vessels, and does not cause blistering even at high concentrations, thus limiting its classification as a true rubefacient.
**Effects on the Circulatory System**
Pungent substances, including chili, stimulate taste receptors on the tongue, reflexively causing a rise in blood pressure (particularly diastolic pressure), with no significant effect on pulse rate. Capsaicin or chili preparations, when injected intravenously into anesthetized cats or dogs, induce a transient drop in blood pressure, bradycardia, and respiratory distress—effects attributed to stimulation of chemoreceptors and stretch receptors in the lungs and coronary vascular regions. Capsaicin has also been shown to exert a direct excitatory effect on isolated guinea pig atria and a vasoconstrictive effect on rat hindlimb blood vessels.
